Tofu Pumpkin Pie

Ingredients:
  • 16 oz silken tofu
  • 2 t cinnamon
  • 2/3 c honey
  • 1 t nutmeg
  • 2 egg whites
  • 1/2 t each allspice, ginger, cloves
  • 1 3/4 c pumpkin (1 can)
  • 1/4 t salt
Directions:
  1. Blend tofu till smooth, add other ingredients and blend.
  2. Pour into 9" pie shell, and bake 1 hour at 400°.
