Biscotti di Prato

Ingredients
  • 2.5 c flour
  • 3/4 c sugar
  • 1 t baking powder
  • 1 t grated orange peel
  • 1/2 t baking soda
  • 1.5 t vanilla
  • 1 t salt
  • 1 c chopped toasted almonds
  • 4 eggs, at room temperature
Directions:
  1. Preheat oven to 325°; butter and flour a large baking sheet.
  2. Beat eggs with sugar till light and foamy, then beat in orange peel and vanilla.
  3. Sift together other dry ingredients and stir in. Stir in almonds.
  4. Shape dough into two 14x2" logs about 2" apart, and smooth with spatula.
  5. Bake 30 minutes or until golden.
  6. Remove and reduce heat to 275°, and cool ten minutes.
  7. Transfer logs to cutting board and cut diagonally into 1/2" slices.
  8. Stand slices upright on baking sheet, about 1/2" apart, and bake 30 minutes.
Yield: 4 dozen.
