Yield: 4-6 servings
Ingredients:
- 3 T olive oil
- 2 T chopped parsley
- 1 onion, chopped
- 8 garlic cloves, minced
- 2 T tomato paste
- 1 t cumin
- 1 t coriander
- 1/2 t salt
- 1 t paprika
- 1/2 t hot pepper flakes or cayenne
- 1 1/2 c water
- 2 lbs flat fish fillets [grouper, roughy, etc.]
- Saute parsley, onion and garlic till onion is translucent.
- Add all other ingredients besides fish, and heat till mixed well.
- Put fish in shallow baking dish and pour sauce over it. Bake at 350 degrees for 30 minutes.
