Moroccan Poached Fish

Time: 1 hr

Yield
: 4-6 servings

Ingredients:
  • 3 T olive oil
  • 2 T chopped parsley
  • 1 onion, chopped
  • 8 garlic cloves, minced
  • 2 T tomato paste
  • 1 t cumin
  • 1 t coriander
  • 1/2 t salt
  • 1 t paprika
  • 1/2 t hot pepper flakes or cayenne
  • 1 1/2 c water
  • 2 lbs flat fish fillets [grouper, roughy, etc.]
Method:
  1. Saute parsley, onion and garlic till onion is translucent.
  2. Add all other ingredients besides fish, and heat till mixed well.
  3. Put fish in shallow baking dish and pour sauce over it. Bake at 350 degrees for 30 minutes.
