Fruit Compote

Time: 90 minutes plus chilling time
Yield: 8 servings

Ingredients:
  • 2 cans dark cherries, with juice
  • 2 cans slices peaches, drained and cut in chunks
  • 1 c dried apricots
  • 1/2 c prunes
  • 1 1/2 T orange rind
  • 1 1/2 T lemon rind
  • 1/2 c orange juice
  • 1/4 c lemon juice
  • 3/4 c brown sugar
Method:
  • Bake for 1 hr at 300°, finish another 15 minutes at 325°, then cool.
Notes: A little less sugar will do. Best after marinating in refrigerator for 1 day.
